Needs to Eat More Fruits and Vegetables
A growing
body of research proves that fruits and vegetables are critical to promoting
good health. In fact, fruits and vegetables should be the foundation of
a healthy diet. Most people need to double the amount of fruits and vegetables
they eat every day.
Here are some
of the Kentucky Proud superstars:
Blueberries
Blueberries
contain more antioxidants than just about any other fruit or vegetable,
and they lower the risk of age-related illness. Try to eat
1 cup a day several times a week. Kentucky Proud blueberries are

Broccoli
and other cruciferous vegetables

Broccoli
and other cruciferous vegetables, such as Brussels sprouts, cabbage, kale,
turnips, cauliflower, collards, bok choy, mustard greens and Swiss chard
are true superfoods. They are an excellent source of B vitamin,
folate, riboflavin, potassium, iron and vitamin C. Broccoli is a
good source of beta-carotene and lutein. Some studies indicate that
eating cruciferous vegetables promotes eye health. Experts indicate
that you should eat 1/2 to 1 cup of cruciferous vegetables daily.
Kentucky Proud broccoli is available June through mid-July and again in
October and November.
Spinach
Some
studies indicate that eating spinach supports cardiovascular health, and
might lower the risk of age-related illness. Spinach is nutrient-dense,
and is a good source for phytonutrients such as lutein and zeaxanthin,
plus vitamins and minerals like riboflavin, vitamin B6, folate and magnesium.
Experts recommend that you eat 1 cup of steamed spinach or 2 cups of raw
spinach several days a week. You can find Kentucky Proud spinach
during the spring and fall.
Tomatoes

Tomatoes
are the primary source of lycopene, which promotes prostate health and
supports the immune system. Some studies indicate that lycopene
might block the destructive effects of free radicals and protect beneficial
LDL cholesterol. They also provide fiber, B vitamins and vitamin
C. You should try to eat a 1/2 cup of tomatoes 3 to
4 times a week. Kentucky Proud tomatoes are available July through
October.
