Kentucky Country Style Quiche
You'll need: 2 uncooked pie shells (homemade or your favorite store-bought) 1 1/2 pounds Swiss or Gruyere Cheese (shredded or grated) 6 whole fresh eggs 1/2 cup heavy cream 1/2 cup milk dash of nutmeg 1 1/2 pounds fresh Kentucky Proud green beans 1/4 pound diced Kentucky Proud onion 10 ounces Kentucky Proud country ham (cooked or raw), diced. Mix green beans, onion and country ham in pot with 6 cups water. Simmer 2-3 hours, drain and cool. Puree or chop to your desired size. Divide bean and ham mixture evenly between pie shells. Mix eggs, cream, milk, nutmeg, cheese and pepper. Add salt to taste. Pour over bean mixture in pie shells, lightly mix together. Place on cookie tray in oven at 325 degrees for 20-30 minutes.
