Kentucky Proud cucumber salad

You'll need:

2 Kentucky Proud cucumbers, peeled and sliced thinly

1 1/2 cups cider vinegar

1/2 cup extra virgin olive oil

1/2 tablespoon sugar

1 cup water

2 tablespoons fresh Kentucky Proud dill weed, chopped

3-4 Kentucky Proud green onions, chopped

3 cloves Kentucky Proud garlic, minced

2-3 ripe red Kentucky Proud tomatoes, chopped

salt to taste

Combine all ingredients except tomatoes in a bowl and refrigerate for at least 1 hour.  When ready to serve, spoon cucumbers over sliced tomatoes.  Keeps for about a week and can be extended by adding more cucumbers.
