Purnell's "Old Folks" Sausage

"Old Folks" Sausage Cheese Balls

You'll need:

1 pound Purnell's "Old Folks" smoked OR hot pork sausage

8 ounce sharp cheddar cheese, grated

3 cups Bisquick

Thoroughly mix ingredients together in a mixing bowl.  Shape mixture into one inch balls and place on a baking sheet.  Bake at 350 degrees for 15 to 20 minutes.  This appetizer can be frozen up to one month and baked when ready to use. 

Yields 30 to 40 balls.

Breakfast Casserole

You'll need:

2 pound Purnell's "Old Folks" Sausage (medium, medium-hot, or hot)

1  six ounce package croutons

2 cups shredded cheddar cheese

2 cups shredded Monterey jack cheese or colby cheese

1/4 to 1/2 cup diced onion (to taste)

8 eggs

2 cups half and half

1 1/2 cups milk

salt and pepper to taste

chopped red and green peppers

Cook sausage and onion in large skillet until browned.  Drain, crumble and set aside.  Spread croutons on bottom of lightly greased 9x13 inch baking dish.  Cover croutons with cheeses.  Sprinkle cooked sausage over cheese.  In a large bowl, beat together eggs, cream, milk, salt and pepper; pour mixture evenly over sausage.  Finally, top with diced peppers according to taste.  Cover and refrigerate casserole for 8 hours.  Bake at 350 degrees for 45 to 60 minutes.  Let stand 20 minutes before serving.
