Kentucky Proud broccoli is available in June and October.

 

Selecting Kentucky Proud broccoli.

Nothing else is close to Kentucky Proud broccoli.  Depending upon weather and where in the Commonwealth you live, you'll find it at your local grocery store, farmer's market, or roadside stand in June and in October.  Choose tender, young, dark green stalks with tightly closed buds.  Buds with yellow flowers or which has wilted indicate that the broccoli is old, and may be tough.

Keeping Kentucky Proud broccoli fresh.

You should store broccoli unwashed, in perforated plastic bags in the refrigerator.  It will store well for five days.  The shorter the storage time, the better it will taste...and the higher the nutritional value!  Wash broccoli just before using it.

A great Kentucky Proud broccoli recipe:  Broccoli Salad.

Here's one of our favorite broccoli recipes, for a delicious broccoli salad:

You'll need:

1 head of fresh Kentucky Proud broccoli, cut into small pieces.

1 pound of Kentucky Proud country bacon, cooked and crumbled.

1 small red onion, chopped.

1/2 cup black raisins.

1 cup unsalted sunflower seeds.

For the dressing:

1 cup mayonnaise.

1/2 cup sugar.

2 tablespoons red wine vinegar.

Mix the salad ingredients together and set aside.  Mix dressing ingredients in a separate bowl and then pour over salad.  Refrigerate until ready to serve.
