Avoid onions with seedspouts or sprouts. Moisture at the neck of the onion indicates decay. Storing Kentucky Proud onions Store onions in a cool, dry, dark place to prevent sprouting and decay. Don't bruise them. Onions can be stored in a cool, dry, dark place in open mesh containers for several weeks. A Kentucky Proud favorite...Kentucky Onion Soup. You'll need: 1 cup bread cubes 2 cups Kentucky Proud onions, thinly sliced 2 Tablespoons oil 4 cups beef broth or stock 1 tablespoon butter, melted 2 tablespoons Parmesan or blue cheese, grated Toast bread cubes in a 325 degree oven until they are completely dried out and lightly browned. Brown onions slightly in oil. Bring stock to a boil, reduce heat. Add onions and simmer, covered until onions are tender, about 15 minutes. Toss toasted bread crumbs with butter and cheese and sprinkle on top of soup just before serving. Yields 6 servings.
