Selecting Kentucky Proud peaches

There are many varieties of peaches, and they're not easy to tell apart.  But look at the undercolor, which should be a deep yellow or white.   A greenish color indicates that the peach was picked too early; it wil never ripen properly.  Mature peaches should yield to gentle hand pressure.  But don't squeeze a peach.  It will bruise.  Avoid over-ripe, bruised or wrinkled peaches, which will decay quickly.

Storing Kentucky Proud peaches

You can ripen peaches by storing them in a single layer in a loosely closed paper bag at room temperature for a day or two.  Store ripe peaches in the refrigerator.  They'll last about a week. 

A "peachy" Kentucky Proud favorite...Easy Peach Cobbler.

You'll need:

1/2 cup (1 stick) butter

1 cup flour

2 teaspoons baking powder

1 cup sugar

3/4 cup milk

3 cups Kentucky Proud peaches, skinned, pitted, sliced

1 cup sugar

1/2 cup water

Melt the butter and pour into a baking dish.  Mix the flour, baking powder, 1 cup sugar and milk in a bowl.  Pour over the melted butter.  Spread the peaches over the dough.  Mix 1 cup sugar and water in a bowl.  Pour over the peaches.  Bake at 350 degrees for 45 to 50 minutes.  (The dough rises to the top of the peaches and makes a top crust.) 

Yields 8 servings.
