Kentucky Proud peas are available from mid-May through June.

Selecting Kentucky Proud peas.

Fresh pea pods should be bright green and moist, and should feel slightly fuzzy to the touch.  Avoid peas that are dark geen, wilted or scarred.

Storing Kentucky Proud peas.

The sooner fresh peas are eaten after buying, the sweeter the taste.  Peas can be refrigerated for up to two days.  Store them unwashed in the vegetable crisper or in a plastic bag.  For longer storage, you should freeze them.

A Kentucky Proud favorite...Fresh pea and mushroom casserole

You'll need:

2 cups shelled, fresh Kentucky Proud peas

1 cup sliced fresh Kentucky Proud mushrooms

1/4 cup chopped Kentucky Proud onion

2 tablespoons butter

1 teaspoon brown sugar

1 tablespoon chopped pimento

1/2 teaspoon salt

dash black pepper

Cook peas in boiling water for 15 minutes.  Drain.   Saute mushrooms and onion in butter until tender.  Stir in sugar, salt and pepper.  Add cooked peas and pimento   Cover and heat for 5 minutes.
