Selecting Kentucky Proud raspberries

Raspberries come in many different colors, including red, black, purple and even yellow.  Whatever color they are, raspberries should be large, uniform in color, bright and shiny, and firm to the touch.  Look for stains on containers which could indicate crushed or bruised fruit. 

Storing Kentucky Proud raspberries

Handle raspberries gently to avoid bruising, which shortens the life of fruit.   Raspberries are highly perishable and should be refrigerated immediately.  Store them in a covered container in the vegetable keeper.  They should be used within two days.  When you're ready to use them, wash them gently in cold water, then lift them out and drain them.  You shouldn't soak raspberries in water.

Here's a great Kentucky Proud recipe...Fresh Southern Raspberry Pie

You'll need:

4 cups fresh Kentucky Proud raspberries

3/4 cup water

2 cups sugar

3 tablespoons corn starch

1 tablespoon lemon juice

1 baked pie shell

Cook 1 cup raspberries in water for about 3 minutes.  Drain, saving juice.   Thicken juice with sugar and corn starch.  Add lemon juice.  Put small amount of thickened juice in pie shell, then add remaining (3 cups) berries.  Pour rest of juice over top.  Refrigerate 2 or 3 hours.  Serve with whipped cream or vanilla ice cream.
