Screamin' Mimi's Salsa Sweet & Spicy Pork Tenderloin You'll need: 1 1/2 to 2 pounds lean pork tenderloin Screamin' Mimi's Sweet Hot or Sweet Hotter Salsa salt and pepper Make a cut down the center length of the tenderloin. Cut slightly deeper than halfway through the tenderloin. In the open cut, add 4 or 5 spoons of Screamin' Mimi's Sweet Hot or Sweet Hotter Salsa. Reshape and toothpick or tie several places along the cut. Brush the top of the tenderloin with additional salsa. Bake at 350 degrees for 40-45 minutes or until internal temperature reaches 170 degrees. Slice tenderloin into 1 1/2 inch slices and serve. *** Meatloaf with a Motor You'll need: 1 1/4 pounds lean ground beef or ground turkey 6-8 saltine crackers, crumbled 1 egg 9 ounces Screamin' Mimi's Sweet Hotter Salsa garlic salt and pepper to taste. Crumble crackers and mix all ingredients well. Mold into a loaf shape and place in a greased pan. Brush top of loaf with additional salsa and bake at 350 degrees until done...about 1 hour.
