Southern Delight

Southern Delight Gourmet Foods, LLC

Artichoke Almondine Pasta Sauce

You'll need:

5 tablespoons olive oil

2 6 ounce cans tomato paste

4 teaspoons oregano

1 teaspoon garlic

3 teaspoons basil

1/4 teaspoon salt

5 teaspoons Southern Delight Classic Seasoning

2 14.5 ounce cans plain petite diced tomatoes

2 jars Southern Delight Savory Apple & Honey Mild Salsa

1 12 ounce jar marinated quartered artichoke hearts (cut into 3-4 pieces each, drained well)

1 cup sliced almonds

1 1/4 cup water

2 pound box penne pasta

Place water and almonds in a 4 quart sauce pan or electric skillet.  Simmer for 15 minutes at medium heat to partially cook the almonds.  Add remaining ingredients (except pasta) and simmer for 15 minutes on medium heat, stirring constantly.  After sauce has simmered for 15 minutes, heat water for pasta, cooking using directions on package.  Drain pasta and toss with a splash of olive oil.  Serve a generous portion of Artichoke Almondine Pasta Sauce over pasta, and serve with salad and garlic bread.  Total cooking time--about 30 minutes.  Serves 8.  Enjoy!

"The Best" Slow-Cooked Smoked Pork Barbecue

You'll need:

1 7-8 pound Boston Butt pork roast

olive oil (about 1/4 cup)

Smoky Pecan Peppercorn Marinade (about 1/4 cup)

1/2 jar Southern Delight Classic Gourmet Seasoning

1/2 cup water

1 cup Smoky Pecan Peppercorn Marinade

Hamburger buns

sliced sweet onion

sliced dill pickles

Rub pork with marinade and then rub with olive oil.  Season heavily with classic seasoning (1/2 jar).  Place hickory chips in charcoal or over heating element in home water smoker, placing meat on smoker fat side down.  Smoke for 8-12 hours, depending on smoker, air temperature and wind.

Remove meat from smoker and cut in very large pieces to fit in crock pot.  If it's not completely done, that's OK.  Pour 1/2 cup water and 1 cup smoky pecan peppercorn marinade over meat.  Cover and cook on LOW for 8-12 hours.  Remove bone, and use slotted spoon to shred the meat, picking out fat pieces.  Drain off excess fat with a baster.  It's now ready to serve on toasted buns with sliced onions and dill pickles.  Serves 12-16.  Enjoy!
