Kentucky Proud strawberries... Nothing else is close. Kentucky Proud strawberries are available from mid-May through mid-June. Selecting Kentucky Proud strawberries Strawberries should be a full, bright red with firm flesh, with bright green, fresh looking caps attached.. Strawberries won't ripen after they're picked, so make sure the berries you buy are fully ripened. Storing Kentucky Proud strawberries Take strawberries home immediaely after you buy them. Gently remove them from their market or store container. Leave the caps on the berries, and then gently arrange them in a single layer in a shallow container, and refrigerate them. You should try to use them as soon after purchase as you can. Just before serving, wash them gently in cold water in a colander. Drain and remove the caps by giving them a slight twist with a sharp knife. A delicious Kentucky Proud treat...Sunrise Strawberry Pie You'll need: 2/3 cup sugar 2 tablespoons cornstarch 1 cup water 1/2 (3 ounce) package straberry gelatin 1 quart Kentucky Proud strawberries 1 baked (8 inch) pie shell Combine the sugar, cornstarch and water in a saucepan and mix well. Cook until thickened and clear, stirring constantly. Stir in the gelatin. Pour over the strawberries in a bowl and toss lightly. Spoon into the pie shell. Chill in the refrigerator until set. Serve with whipped cream. Yields 8 servings
