Kentucky Proud summer squash...

Nothing else is close.

Yellow Squash

Kentucky Proud summer squash is available from June through the end of October. 

Selecting Kentucky Proud summer squash

Squash should be fresh, tender, glossy, and free from blemishes.  The two most popular varieties of summer squash are crookneck and zucchini, but there are several others.   Crookneck squash should be bright yellow.  Zucchini should be dark green.  

Storing Kentucky Proud summer squash

Although squash can be refrigerated for three to five days, the sooner after purchase it's eaten, the better it will taste.    Wash it gently before preparation.

Here's an outstanding Kentucky Proud treat...Oven-fried Zucchini!

You'll need:

3 tablespoons herb-seasoned bread crumbs

1 tablespoon grated Parmesan cheese

1/4 teaspoon salt or garlic salt

1/8 teaspoon black pepper

2 medium unpeeled Kentucky Proud zucchini squash

2 teaspoons vegetable oil

2 tablespoons water

Mix the bread crumbs, Parmesan cheese, salt and pepper together on a sheet of waxed paper.  Cut the zucchini into quarters lengthwise.  Cut each quarter into halves or thirds.  Place in a plastic bag and add the oil and water.  Close the bag and shake until the zucchini is lightly coated.  Roll each piece of zucchini in teh bread crumb mixture until lightly coated. Arrange in a single layer on a baking sheet sprayed liberally with nonstick cooking spray.  Bake at 475 degrees for 7 minutes or until brown.

Yields 4 servings.
