Zesty Grilled Corn on the Cob Leaving husks and silks on corn, soak for 30 minutes in enough cold water to cover. Remove corn from water and pull the husks back a little to drain excess water. Arrange corn on the gril over hot coals and close lid of grill. Cook 25-30 minutes, turning frequently, until corn is tender. If husks are too hot to handle, let them cool before removing them from corn. Squeeze fresh lemon juice over corn. Sprinkle with salt, pepper and chili powder. *** Eggplant Parmesan You'll need: 1/4 cup milk 1 egg 1 cup bread crumbs 1/2 cup Romano cheese 1 large eggplant, peeled and sliced into 3/4 inch pieces 1 15 ounce jar prepared spaghetti sauce 1 cup mozarella cheese 3/4 cup Parmesan cheese Combine milk and eggs and beat until well mixed. In another bowl, combine bread crumbs and Romano cheese. Slip eggplant in milk mixture and roll in bread crumbs. Brown slices in non-stick skillet coated with vegetable spray. In a greased 2 quart baking dish, alternate layers of eggplant, spaghetti sauce and mozzarella cheese, beginning with a layer of eggplant and ending with sauce. Bake at 350 degrees for 35 minutes. Remove from oven and sprinkle with Parmesan cheese. Serves 6. *** Grilled Garden Medley You'll need: 2 large tomatoes, cut in large chunks 1 small onion, sliced 2 medium zucchini, sliced 2 medium summer squash, sliced margarine 2 teaspoons fresh herbs such as thyme, dill, oregano, minced salt and pepper Place all ingredients on a piece of heavy aluminum foil. Dot with margarine and sprinkle with salt and pepepr and herbs. Bake over medium to high coals for 30-45 minutes. *** Beef Kabobs You'll need: 1 pound boneless beef cut into 1 inch cubes 1 medium green/red pepper, cut into 1 inch lengths 1 medium yellow sqush or zucchini (or both!) cut into 3/4 inch pieces 1 ounce ranch salad dressing mix 2 tablespoons water 1 tablespoon vegetable oil Alternately thread equal amounts of beef and vegetables onto each skewer. In small bowl, cobine dressing mix, water and oil. Brush onto all sides of kabobs. Place on grill over hot coals and grill until meat is done and vegetables are crisp-tender.
