You'll need: 8 Kentucky Proud tomatoes, chopped 2 Kentucky Proud red bell peppers, chopped 2 Kentucky Proud green bell peppers, chopped 1 Kentucky Proud yellow onion, chopped 2 ounces fresh Kentucky Proud cilantro, chopped 3 chipotle chile peppers, chopped juice of 4 limes juice of 1 lemon 1 teaspoon cumin 1 teaspoon red chili powder 1 tablespoon chopped Kentucky Proud garlic 2 tablespoons extra virgin olive oil salt to taste Combine the tomatoes, bell peppers, and onion in a large bowl and mix well. Add the cilantro, chipotle chiles, lime juice, lemon juice, cumin, chili powder, garlic and olive oil and mix well. Season with salt to taste. Chill, covered, until ready to serve.
