Kentucky Proud Edamame Soybeans... Nothing else is close.
Kentucky Proud edamame soybeans are available from mid-July through the end of August.
Selecting Kentucky Proud edamame Edamame is a variety of soybean with a sweet, somewhat nutty flavor. Grown in Asia for hundreds of years, it is becoming increasingly popular in the United States, and more and more Kentucky farmers are growing it. The edible part of the product is the bean inside the pod. Look for pods that are bright green; avoid those that are starting to yellow. Storing Kentucky Proud edamame Try to use fresh edamame within a day of purchase. If you must store it, place the pods in a plastic bag and refrigerate immediately. Use within two weeks. Preparing Kentucky Proud edamame Place pods in boiling water and cook for 2-5 minutes. Drain and cool. Remove the beans from the pods. Discard the pods. They are good as a side dish tossed with a little salt and oil, as an addition to stir-fry dishes or soups, or even as a snack by themselves. One of our favorite edamame recipes is for this Edamame and Corn Salad: You'll need: 1 cup cooked and shelled Kentucky Proud edamame 1 cup Kentucky Proud weet corn 2 medium Kentucky Proud tomatoes, diced 4 Kentucky Proud green onions, sliced 1-2 cloves of Kentucky Proud garlic, minced 1 tablespoon coarsely chopped fresh Kentucky Proud cilantro (basil or parsley will also work. Avoid dry herbs in this recipe.) 2 tablespoons freshly squeezed lime juice 2 tablespoons extra-virgin olive oil Mix all ingredients in a medium bowl. Cover and refrigerate for at least one hour. Makes 4 servings.
