Recipes from Chef Nancy Russman

Italian Ground Beef or Pork

You'll need:

1 pound ground beef or pork

1 teaspoon fresh minced garlic

1/4 teaspoon salt

1/4 teaspoon black pepper

3/4 teaspoon Italian seasoning

1 large egg

1/2 cup bread crumbs, fine

In a large bowl, combine all ingredients.  Form into 8 balls or into 4 patties.  Cook on the grill, or in a 375 degree preheated oven until cooked through.  Serve the meatballs with your favorite tomato sauce or serve the burgers on your favorite buns with fresh sliced tomatoes.

Mardi Gras Burgers

You'll need:

1/2 pound ground beef

1/2 pound ground pork

1/4 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon cayenne pepper (optional)

1/4 teaspoon paprika

1/4 teaspoon Italian seasoning

1/4 teaspoon garlic powder

1 ripe tomato, sliced

4 thin slices red onion

4 slices green bell pepper

2 cups cooked white rice

In a bowl, mix top 8 ingredients, form into 4 patties.  Cook burgers on the grill or in a preheated 375 degree oven until cooked through.  Place cooked burgers on top of rice and garnish with a slice of tomato, onion and bell pepper.

Chef Nancy's Pork and Apple Sausage Burgers

You'll need:

1 pound ground pork

1/2 onion, minced or grated

1/2 red delicious apple, minced or grated

1 large egg

1/2 cup rye bread crumbs

1/8 teaspoon dill

1/8 teaspoon caraway seed

1/4 teaspoon garlic powder

1/4 teaspoon salt

1/4 teaspoon black pepper

Place all ingredients in a bowl and mix together.  (Make sure apple and onion are minced very small.)  Form into 4 patties.  Cook on grill or in a preheated 375 degree oven until cooked through.  Serve with German mustard on a rye bun. 

 

HONEY & GARLIC CHICKEN

You'll need:

Chicken pieces

8 pieces/1 chicken

Garlic, fresh minced

2 cloves

Lemon juice

2 tablespoons

Soy sauce

2 tablespoons

Oil, vegetable

4 tablespoons/¼ cup

Honey

1/3 cup

Worchestershire sauce

1/3 cup

Garlic, fresh, minced

2 cloves

Salt & pepper

To taste

 

  • Mix in bowl, blender, or food processor the minced garlic, lemon juice, soy sauce, vegetable oil and marinate chicken in mixture, cover, refrigerate up to 2 hours
  • Grill the chicken or cook in an oven at 375 until cooked through.
  • Blend remaining ingredients in a bowl, blender or food processor.
  • Put cooked chicken on a platter and put honey sauce over the pieces
