No matter what color the pepper may be, always look for the color to be in a very rich shade. Premium peppers will have a glossy sheen and firm sides. Don't buy peppers that feel soft, look wrinkled, or have obvious spots. They're probably old. Keeping Kentucky Proud peppers fresh. Store green peppers in the refrigerator crisper at 46-48 degrees for no longer than two weeks. Preparing Kentucky Proud peppers. To prepare a bell pepper, cut around the stem, then shake out and discard the seeds. Remove the white portion of the center using a paring knife. Even though bell peppers are normally sweet, the ribs can be somewhat hot.
